Snicker Bites
The easiest snack which tastes epic, and makes a lovely after dinner treat. I will suggest making a big batch, as they keep in the freezer for three months. You will rarely find recipes with dates on here but as these are half a date per snack, and blood sugar rise is slowed by the natural fat and protein of nut butter, I will make an exception! here is the recipe:
Ingredients for 20 portions:
27 Medjool dates (3 packs):
2 tablespoons crunchy peanut butter
Handful of roasted salted peanuts
250g of 85% dark chocolate
Sprinkle of sea salt flakes
Tablespoon of freeze dried raspberry pieces
Teaspoon of odourless coconut oil
Method:
Line two baking trays with grease proof paper. Slice the dates down the long side, open out and press down, then cut in half vertically. A thin layer of nut butter next and roll up by putting a peanut at one end. Melt the chocolate in a bowl over heated water and allow to cool enough to make the mixture thicker, add the drop of coconut oil to keep the chocolate flexible. Cover the date and nut butter pieces and before putting in the freezer sprinkle with salt flakes and raspberries. Serve from the fridge, you can also store batches in tupperware in the freezer.
