Berry Chia Jam
Another of the easiest recipes! I make this every Sunday for the week ahead so breakfast & snacks are ready to grab.
Ingredients:
Bag of frozen mixed berries (you could also choose 1 variety, raspberries, strawberries or blueberries).
3 tablespoons of chia seeds
1 dessert spoon of maple syrup (optional), I don’t feel it necessary but taste and add at the end .
Method:
Warm your berries in a small saucepan, add chia seeds, cook slowly so everything breaks down and stir often to let the chia seeds expand. It will seem a little runny once all the fruit has broken down so leave the mix to cool, it thickens.
Save half for the freezer and the other half to top Greek yoghurt, add to porridge or baked oats, spread on toast or put on ice cream!
