Nut Butter Buttons

You can adapt this recipe to make up the amount you want for your family by doubling up the recipe.

Ingredients:

3 tablespoons of smooth peanut butter

1.5 tablespoons of ground almonds

1 desert spoon of odourless coconut oil

1 desert spoon of maple syrup

Raisins or choc chips

Method:

Line a baking tray with greaseproof paper. Pre heat oven to 170 degrees. Combine above ingredients until you have a thick paste you can mould easily in the hands. Place balls of mix, about the size of pound coin. Press down by placing a raisin or choc chip in the middle, if slightly larger ou can press with a folk as I have here. Bake for 10 mins till golden at the edges.

These need to totally cool to hold shape & remain delicate. Great as granola on yoghurt and fruit as well as on ice cream to add protein. Lovely with whole milk for kids.
