Rainbow Poke Bowl

Protein, fibre, colour, natural fats, carbs and even gut healthy fermented food in one bowl - absolutely delicious!

Ingredients: (6 people)

2 Carrots (ribbons & cut again)

1 Cucumber (ribbons & cut again)

4 Tuna steaks (cut in small cubes)

2 Avocado (chopped in cubes)

1 Red pepper

Half tub of Vadasz super beet kimchi

Half bag of frozen edamame

1 Mango (finely diced)

1 Lime (zest and juice)

6 cups of rice (basmati with wild)                      

Crispy onions (from Dino’s)

5 Spring onions (finely sliced)

2 teaspoons of black sesame seeds

Squeeze of Uni-Eagle sriracha mayo

Small handful of fresh chives (cut with scissors)

Marinate: 4 tablespoons of rice wine vinegar, 4 of toasted sesame oil, 4 of soy sauce & 2 of honey.

Method: cook the rice to package instructions and set aside to cool. Chop all vegetables and mango, giving each child responsibility for one - mango needs juice of the lime and zest mixed in. Marinade tuna chunks in the dressing adding half the sesame seeds and the chopped chives. Blanch the frozen edamame for 1 minute and leave to cool. Now you can pull it all together in a big serving bowl, adding extra dressing if desired, topped with spring and crispy onions, more sesame seeds and a generous drizzle of sriracha. Stir through once with serving spoons and allow to serve up into small one person bowls!
