Quinoa Pancakes
Not only are these naturally gluten free, but also packed with your all important macro and micro nutrients. A family healthy favourite, just add a dollop of full fat natural yoghurt, fresh fruit & granola.
Ingredients (serves 1 or 2):
1 small banana (mashed)
Teaspoon of coconut oil
1 egg
1 heaped tablespoon of ground almond
1 heaped tablespoon of quinoa flour
Handful of blueberries (chopped in half)
Teaspoon of bicarb of soda
Method: mash the banana, whisk in the egg and combine with dry ingredients, adding the chopped blueberries to the mix just before cooking. Warm the coconut in a frying pan, add dollops of batter and wait for bubbles to form before flipping. Once the pancakes are lightly browned on each side serve up!
The combination of almond & quinoa makes these pancakes light as air!
