Ginger Switchel

This recipe forms part of a bigger story around alcohol and ADHD, something I will cover soon, but for now this is my take on the many shop bought and very brilliant switchels at a snip of the cost and super fresh.

Ingredients:

Big piece of ginger (filled my hand)

1/2 a red chilli

Juice of a lemon

Cup of apple cider vinegar

Dessert spoon of honey

4 Cups of water

Method: skin and roughly chop ginger, chop chilli, and add to all the other ingredients in a saucepan. Briefly bring to the boil then simmer with lid on so as not to loose the fluid for 10 minutes. Leave to cool, add to a nutribullet cup and pour into a clean glass jam jar or kilner, through a muslin if you don’t want any ginger fibres. Add more honey to taste if you wish.

This keeps in the fridge for one week, or pour liquid into ice trays for individual portions.

To serve: pour a generous splash over ice, filling the rest of the glass with fizzy water, add a sprig of rosemary or mint.

So refreshing, zingy & fantastic for your gut & immune system!
