Eggy Bread & Nectarines

My hope is that you can squeeze in lots of egg, even for those that don’t usually like them! It is a family favourite in our house so I hope you all love it.

Ingredients (for 2 to 4):

Unsliced sourdough bread

2 Nectarines, cut

2 Teaspoons of vanilla essence

Pinch of cinnamon

Maple syrup

30g of Butter

2 Eggs

Splash of whole milk or alternative

Method: In a big mixing bowl whisk up eggs with vanilla & milk. Thickly slice two big pieces of sourdough and put them in the egg, turning, pressing & absorbing all the egg mix. Pop a griddle pan on the heat with a little butter wipped across the rivets and lay the nectarine on the flesh side to cook. In a large frying pan heat a big nob of butter and when sizzling add the eggy breads. If there is extra fluid, carefully pour on top of each bread. Cook through so that the eggy breads are browned on both sides and nectarines striped on one. Cut breads into thick soldiers, arrange with fruit and a big dollop of Greek yogurt, sprinkled well with cinnamon. Serve with a splash of maple syrup.
