Gut Loving Salad

This gut loving, super nutrient salad is everything, you will feel the goodness with every bite . A great source of B vitamins for those that prefer not to eat meat but also a great side with red meats or sausages. I like to keep things flexible! It is the perfect transition from Summer to Autumn salad, hope you enjoy.

Ingredients (2 people):

Bag of kale (chopped)

2 celery sticks (sliced)

1/2 tin of chickpeas

1/2 pouch of Merchant Gourmet Beluga lentils

Handful of goji berries

Handful of pistachios & hazelnuts

Tablespoon of beetroot kimchi by Vasdig

Teaspoon of sesame & fennel seeds

Dressing: teaspoon of honey, splash of EVOO, salt pepper & dessert spoon of white miso paste with water.

Method: massage kale firmly for 5 minutes with EVOO & add in the rest of the ingredients. Nuts are pan roasted with fennel seeds, sesame & honey. Dress well & eat with joy!
