Plant Protein Chocolate Mousse
These are so wonderfully simple to make and benefit from the high protein value of quality silken tofu. As my daughter says as she licks the spoon “it tastes exactly like chocolate mousse.” That for me is the evidence I need that my nutrition clients will also enjoy this and it makes it to my list of puddings for those on refined sugar, dairy and/or egg restricted diets.
Ingredients:
90g Green & Blacks organic dark chocolate
349g silken tofu (carton)
3 tablespoons of maple syrup
2 teaspoons of vanilla essence
Method: melt the dark chocolate in a small saucepan and pour into a mixing bowl adding the block of silken tofu , vanilla and maple syrup. Using a hand held electric wisk or blender mix until super smooth and shiny. Spoon into small ramekins, this should make 4 to 5 portions and top with your choice or nuts, fruit or a dusting of coco powder. Put in the fridge for an hour before eating, this mix will last for 3 days.
