Easy Chicken Kebabs

A real family favourite with the taste of Lebanon, easy to prepare using cheaper cuts of meat.

Ingredients of chicken marinade:

2 boxes of chicken thighs

1 teaspoon of turmeric

1 teaspoon of paprika

Drizzle of olive oil

3 crushed garlic cloves

1 teaspoon of 7 spices (optional)

1 teaspoon of cumin

Juice of half a lemon

4 tablespoons of natural yoghurt

Salad: 20g Green olives, chopped

50g of feta crumbled

3 tomatoes, chopped

1 bag of baby salad leaves

1/4 chunk of cucumber, chopped

1 tablespoon of raw apple cider vinegar

Method: Chop the chicken thighs into chunks and marinade for a couple of hours in the yoghurt and herb mix. Press onto wooden skewers. Brown well on each side in a fry pan and put these straight in the oven at 190 degrees for 15 minutes.

Meanwhile prepare the salad very lightly dressing with olive oil, lemon and cider vinegar because you have lots of sauce coming from the kebabs. You can eat everything together or stuff into a toasted pitta bread? I also like to drizzle with tahini.
