Flax Salmon Fillets

A great source of Omega 3, just one side of salmon each week will keep levels healthy. Other fish that also feed the brain include mackerel, anchovies (add them crushed up in dressings), sardines, as well as crab and prawns.

Ingredients (serves 2):

2 salmon fillets (Alaskan in Tesco)

2 handfuls of tenderstem broccoli or purple sprouting

Half a jar of chargrilled peppers 

2 tablespoon of ground flax

1 lemon (juice & zest)

seasoning

2 tablespoons of extra virgin olive oil

Method: Mix the flax, lemon and oil to a paste and season well. Lay your fish on a large sheet of baking paper on top of a baking tray, cover each fish in the flax paste and fold up paper around the fish. Put in the oven for 10 minutes at 185 degrees. Steam the broccoli, slice the large pre cooked peppers and assemble, adding fish when it is cooked. Nice and quick and easy.
