Carrot, Red Pepper & Lentil Soup

This is a very mellow, early Autumn soup. It benefits from all the powerful orange and red anti-oxidants needed from our diets to reduce inflammation and the soluble fibre of lentils to support gut health.

Ingredients (4 people):

1 red onion

2 large carrots

2 red peppers

2 handfuls of dried red lentils

1 tablespoon of olive oil

250ml of vegetable stock (we love 9 Meals from Anarchy)

Method: soften the red onion in the olive oil, add the carrots and cover with stocks. Simmer until nearly tender, then add the pepper and lentils and continue to simmer carrots until you can easily put a knife through. Take off the heat, season and whizz up till smooth either with a handheld or larger food processor.

I like adding sliced spring onions on the top or crushed red chilli and enjoying with hot buttered sourdough.
