Berry Good Flapjacks

These are gooey and tasty but as healthy as a flapjack can be, squeezing in chia seeds to form the berry jam!

Ingredients for flapjack:

1 Cup of oats

1 1/2 Cups of almond flour

1/2 Cup of coconut sugar or unrefined brown sugar

8 Tablespoon of butter (softened) or coconut oil

1 Teaspoon of baking powder

1 Teaspoon of vanilla paste or extract

For Berry jam:

1 Tablespoon of chia seeds

3 Cups of frozen berries

3 Tablespoons of maple syrup

Method: Mix all the ingredients for the flapjack together in a mixing bowl and then press onto baking paper set inside a loaf tin, leaving a small handful to one side to top the flapjacks. Whilst making this up put the ingredients for the jam in a small saucepan, heat and stir until thick and jammy. This prep should all take 10-15 minutes. Next set the oven to 185 degrees. Put your jam on top of your flapjack base and crumble the last bit of flapjack mix on the top before putting in the oven for 15-20 minutes. Take out, use the paper to lift the warm berry flapjacks out and leave to cool and set. Cut into squares and keep in an airtight container for 3 days.
