Brain Burgers

These are a brilliant way to get those that don’t really ‘do’ fish to get brain boosting Omega 3 and zinc into their diet. I particularly recommend these nutrients for minds that think differently.

Ingredients (serves 4)

1 bag of frozen raw scallops (300g) 1 bag of frozen raw tiger prawns (400g) Bunch of parsley inc stawks (75g) Fresh red chilli Bunch of coriander (75g) Seasoning          Tablespoon of olive oil

Method: defrost your shellfish, put all your ingredients into a food processor and pulse and stir until you have much smaller pieces of fish but still some texture. Take out and form into 4 burgers, wrap in cling film and allow to cool and solidify in the fridge. Take out 30 mins before cooking, and fry in olive oil until golden brown on each side and into a preheated oven at 185 degrees for 20 minutes. Take out and rest for 5 minutes or for extra juice to flow out.

Serve in a brioche bun that has been warmed in the oven, pickle, salad and sriracha mayo.
