Apple & Blackberry Tray Bake
Very easy to throw together with kids and a great way of using up the glut of apples and blackberries when they are in season. As always very little sugar and gluten free if you wish.
Ingredients:
2 small dessert apples or Cox
2 handfuls of blackberries
100 grams of butter
185 grams of Doves GF self raising flour
100 grams of unrefined brown sugar or coconut sugar
2 eggs
2 teaspoons of cinnamon
1 lemon for zest
2 teaspoons of vanilla essence
1 teaspoon of baking powder
Method: Pre-heat oven to 185 fan and line a small roasting tray with baking paper. Peal and chop the apple into small chunks (add lemon juice to prevent them going brown) and set aside blackberries. Beat the eggs in a small bowl to add air. Combine all the other ingredients in a mixing bowl, then add the eggs and finally fold in all the fruit, tipping into the tray and baking for 25 minutes. The top should slightly colour, the fruit just cooked and the sponge moist. Leave to cool completely before cutting into squares, lasts 3 days if kept in an airtight container.
Enjoy with a dollop of Greek yoghurt & honey, a yummy pudding.
