Mini Protein Muffins

Another super quick protein packed snack for all the family to enjoy without the sugar rush! These are grain free and brain boosting.

Ingredients:

2 eggs

2 small bananas

1/2 cup of coconut flour

1 teaspoon of cinnamon

1 teaspoon of vanilla essence

1 teaspoon of coconut oil & extra for wiping

1 desert spoon of maple syrup

1 desert spoon of flax seed

Handful of blueberries

1 teaspoon of GF bicarb of soda

Method: Preheat oven to 170 degrees. Rub a little coconut oil in each space in a tray of mini silicon muffins & place on baking tray. Put all ingredients except the coconut flour in a nutribullet, wizz to smooth. Stir in the coconut flour until you have a thick batter, you may need more flour but be aware of how absorbent this product is. Fill the moulds, 24 mini muffins. Drop a blueberry in the middle of each & bake for 25 minutes until golden brown. Bring out & leave to cool before eating & storing in an airtight container.
