Chestnut Choc Fridge Cake
Chestnuts are not just for Christmas, they are a great source of protein and fibre as well as magnesium and B vitamins. These fridge cakes are great for those on gluten free diets, a healthier chocolatey treat even fussy little eaters will love, tried and tested by my friends and family.
Ingredients:
5 Dried figs, chopped & soaked in 2 tbsp of fresh orange juice
2 Chestnut pouches from Merchant Gourmet
50g Coconut sugar
270g Organic dark chocolate
90g Salted butter
4 Amaretti balls, crumbled
Method: Blitz chestnuts and coconut sugar in food processor until fine. Melt 200g of chocolate with butter and stir into the chestnut mix along with the figs and 3 of the amaretti biscuits pieces. Press this mix evenly into the lined brownie tin. Melt the last bit of chocolate and pour a very thin layer over the pressed mixture, crumbling the last amaretti ball on top. Place in the fridge for 4 hours or overnight. Cut into squares and display before serving on a pretty platter. This will make about 24 squares and they will keep in the fridge for 5 days but Iām sure eaten long before.
