Brain Boosting Breakfast Loaf

This is a bread packed with oats, almond and eggs, perfect for breakfast, which just happens to have banana to sweeten it for kids, there is no other sugar in it so blood sugar can stay stable, key for kids brains to stay focused during the morning.

Ingredients:

3 large bananas

3 eggs

Handful of blueberries

125g ground almond

125g organic oats

1 tablespoon of coconut oil

2 tablespoons of maple syrup

1 teaspoon of vanilla paste or essence

1 teaspoon of baking powder

1 teaspoon of turmeric, ground ginger & cinnamon

Method: Pre heat oven to 170 degrees and line a loaf tin with greaseproof paper. Put all the dry ingredients into a mixing bowl. In another mash the bananas with maple syrup, vanilla and warmed coconut oil, then whisk in the eggs. Combine with dry ingredients and half blueberries, pour into the loaf tin and top with the test of the blueberries. Bake for 45 mins.

Serve in the mornings with natural yoghurt and a little more fruit. Also good with a cuppa for tea. This is refined sugar and gluten free but packed with natural fats and protein, essential in the morning.
