Almond Cacao Balls

These may look like something you have seen so many times before, and are now found all over the snack aisles in supermarkets, but there is a big difference - sugar! Most of these nut balls are blended with vast amounts of either maple syrup, dates or both. ADHD brains need protein and not sugar so there is a grand total of one tablespoon of maple syrup for all of these 16 balls.

Ingredients:

1 small packet (100g) of organic almonds

1 tablespoon of maple syrup

1 tablespoon of almond butter

2 tablespoons of raw cacao

1 teaspoon of melted flavourless coconut oil

Method: soak the almonds in their skins for 2 hours, drain the water and put the almonds in a food processor. Here is the slightly strange bit, you are going to blitz the almonds for 15 minutes, maybe more, and it will go through phases as you pulse. The nuts will go from a crumb to a paste on their own, don’t be tempted to add anything, just keep checking and keep mixing. Before it actually turns into nut butter scrape out into a mixing bowl and add the rest of the ingredients so that you have a think pliable mix you can roll into balls, dip seeds onto and put out on a tray to cool in the fridge. You will keep in the fridge in a pot for family to dip into when they need a yummy filling and super healthy snack.

Benefits: as this is a recipe that uses such simple ingredients it is important to point out the combined power they contain. Zinc and magnesium spring to mind first but you will also find good courses of B vitamins and natural fats and protein, all so important for our brain health.
